ROASTED TURKEY BREAST

INGREDIENTS

• 12 ounces Spaghetti
• 6 slices Turkey breast, roasted
• ¼ cup Onion, minced
• 2 tsp Garlic, minced
• ½ cup Heavy cream
• ½ cup Parmesan cheese, grated
• ¼ tsp Salt
• ¼ tsp Black pepper
• ½ cup Frozen peas, thawed
• 2 cups Turkey, cooked and diced
• 2 tbsp Parsley, chopped

DIRECTIONS

1. Cook the spaghetti in salted boiling water. Add oil and pinch of salt.
2. Place the turkey breast in a large pan over medium high heat. Cook for 4-5 minutes or until brown and crisp.
3. Remove the turkey breast from the pan with a slotted spoon and drain on paper towel.
4. Add the onion to the remaining bacon fat in the pan. Cook for 2-3 minutes or until softened.Add the  garlic and cook for 30 seconds.
5. Add roasted turkey breast and cream to the pan.
6. Stir turkey and cream, cook for 2-3 minutes or until just thickened. Stir in the parmesan cheese, salt, and pepper.
7. Drain the pasta. Add the pasta to the gravy sauce along with the turkey, peas and toss to combine.
8. Sprinkle with parsley, then serve. Top with additional parmesan cheese if desired.
